Slavo's Pico

21 days to go on the Whole30 Challenge…. Crap. Well not too much has changed, pretty much the same as past couple of days. We have been doing this thing for 9 days and I feel like I've gotten over the hump. The wife on the other hand seems to be lagging behind a couple of days. When I asked her if she wanted to do a, "he said / she said " blog post I got a very enthusiastic middle finger. Okay, so we'll try that again later when the 'kill-all-things" stage wears off! Anyways, what I'm learning is that it's important to not starve yourself on this diet. Instead, I eat throughout the day; eggs and bacon in the morning, some almonds or pecans as a snack before lunch (try putting them in the freezer - great for when it's still over 100 degrees outside) , smoothies with fresh/frozen berries, bacon snack after lunch (no shit, I'm eating multiple bacon snacks throughout the day = HEAVEN!), etc. Just have a little something all day long, to fend off the headaches and the aching empty feeling, because that sucks.

Ingredients:

3 Roma Tomatoes - small diced

2 Serrano Chilis - minced

1/2 bunch Cilantro - chopped fine

1/4 Red Onion - minced

2 Limes - juiced

2 tsp - Original Slavo Salt

Preparation:

1. Mix together and let stand for at least 15 minutes.

Slavo’s Tip: Try mixing this with 3 avocados and 3 Tbl of the Pico for some awesome Guacamole.
