Slavo's Mom's Meatloaf

There are a ton of recipes for meatloaf out there so when you find a good one you stick with it.  This is my mom's recipe and it is, by far, the best I've ever had. My secret to amazing meatloaf is to handle the ingredients as little as possible. The less you mix it the less dense it will be.

Ingredients:

1/3 lb Ground Bison – (Sub beef if no bison, but bison is amazing)

1/3 lb Ground Pork

1/3 lb Ground Beef (90/10%)

1 medium Yellow Sweet Onion - small diced

1 Bell Peppers (Red or Yellow) Diced Small

2 eggs

1/3-1/2 cup Oatmeal – Depends how moist or dry you like your loaf.

½ cup brown sugar, packed

1 can tomato sauce – 15 oz

1/4 cup Milk – optional

Original Slavo Salt 

Dash of Paprika, Chili Powder, Cumin, Cinnamon, and Red Pepper Flakes

Optional - add diced mushrooms, carrots, or celery

Preparation

1. Mix tomato sauce/sugar together in separate bowl.

2. Take all of the other ingredients and lightly mix everything together.

3. Add half of the tomato/sugar mix to the meat mixture and save the rest to put on top before baking.

4. Depending on size of pan, bake for 60 – 90 minutes at 350 uncovered. Remove from oven and let rest in the pan on the countertop for 10 – 15 minutes. ENJOY!
