Slavo’s Grilled Scallop & Shrimp Skewers

Who else is ready for a three-day weekend??  While non-traditional, this scallop and shrimp skewer is a great addition to your BBQ menu this weekend. Let me know what you think!  

Ingredients


1 lb medium shrimp – peeled
1 lb sea scallops
Cherry Tomatoes
1 orange – juiced
½ cup dry white wine
¼ cup Olive Oil
2 Tbl finely chopped oregano
Slavo Salt
10” wood skewers


Preparation

1. Place the shrimp and scallops in a 9’x12’ baking dish and add orange juice, wine, olive oil, oregano and Slavo Salt
2. Leave to marinate in refrigerator - covered for 2 hours. Remove from refrigerator 15 minutes before grilling
3. Remove the shrimp and scallops from marinade reserving marinade
4. Alternate the shrimp and scallops on the skewer so that they do not touch placing cherry tomatoes in between (this should make 5-6 skewers)
5. Place on pre-heated grill over high heat and cook turning occasionally until the shrimp are orange and the scallops are light brown (about 15 minutes)
6. Baste with marinade while grilling
