Hump Day!!!! I can’t say how excited I am that this is the last “hump day” of the diet! I will admit things have been getting easier as I’ve gotten into the routine of eating more than 1-2 meals everyday and balancing my bacon/fruit intake. It is really easy to just eat the same things everyday, which will can easily lead you to bail on this endeavor. The key is to pack in as much variety as you possibly can so that you’re constantly eating new and different things. This should help to take your mind off of the enchiladas you’re missing so dearly!
1lb Pork – cut into strips for stir-fry
1 Broccoli Crown – florets broken up and stalk chopped into bite-size pieces
1 Bell Pepper – cut into thin strips
1 Onion – yellow or red sliced thin
2 Tbl Ginger – minced
3 Garlic Cloves – minced
¼ c Cashews – chopped
1 can Water Chestnuts – sliced
1/3 c Soy sauce or Coconut Aminos (whole30)
1/3 c Sesame Oil
1 Tbl Cayenne or Chili Powder
1/4 Cauliflower Head – chopped fine in food processor
1. Place pork, soy, sesame oil, chili powder/cayenne, and Slavo Salt into a bag and marinade for 1 hour.
2. Get a large frypan screaming hot on the stove, add in 2 Tbl of grape seed oil and then the marinated meat. Cook over high heat for 3 minutes
3. Add in onions, cook for 2 minutes then add the garlic and ginger. Cook for additional 2 minutes.
4. Add in the broccoli, cauliflower, bell peppers and 2 Tbl of soy sauce, cook another 2 minutes stirring well.
