Affectionately known as “The caviar of the South,” Pimento cheese is a Southern treat and one of our summer staples. Use this to make delicious mini sandwiches, as a dip for fresh veggies and crackers or try it in place of sliced cheese to take a grilled cheese sandwich to new levels. We like to roast our own peppers, but you can easily substitute with store-bought peppers.
1lb Sharp Yellow Cheddar – grated fine
¼ lb Cream Cheese – softened
3 Large Red Bell Peppers – Roasted, peeled, seeded & chopped
2-3 dashes Hot Sauce – we love Cholula or Valentina
1/8 tsp Cayenne Pepper
1 1/2tsp Slavo Salt
1. Place all ingredients into a mixing bowl and mix very well.
2. Refrigerate and serve chilled.
The mixture will keep in the refrigerator for several days but usually disappears long before then!
