Day 2 on #whole30 was pretty much as much fun as Day 1 just longer! Didn’t sleep well and can only assume it’s my body craving all the crap it usually tries to digest while I sleep. Breakfast was a no brainer – poached eggs with Slavo Salt. I love poached eggs because they’re quick and easy. If you don’t want to deal with cooking the old fashion way in simmering water, I suggest buying an electric poacher. You just put in a bit of water, drop your eggs in the little trays and hit start. They will make them any way you like – runny, medium or hard.
It was a busy day at the Salt Mine so no time for a sit-down lunch. Had to rely on raw almonds and pecans to get me through. The hardest part was helping a caterer friend prep for a gig and seeing all of the goodies we usually snack on while working. Tough but manageable.
Dinner was simple and easy – Grilled Chicken Breasts with Slavo Salt (and Slavo’s Spicy Salt – coming soon!) with grilled Portobellos, Spaghetti Squash and Mixed Green Salad. Desert was a nice cold glass of coconut water – JOY!
Hoping for a better nights sleep tonight….
